Yields 4 servings
1 tbsp fresh grated ginger
6 cups water
1/4 cup tamari
1/4 cup miso paste
8 oz green tea soba noodles, cooked according to package
4 eggs, soft-boiled
Garnishes: grilled shiitakes, grilled broccolini, pea sprouts, scallions, or veggies of choice.
Toasted sesame oil
- Bring water, ginger and tamari to a boil then reduce heat to a simmer and cook for 10 minutes. Whisk about 1/2 cup of ginger liquid into the miso, then whisk miso mixture into the pot. Continue simmering for about 3 minutes, but do not let boil.
- Serve broth with cooked noodles, eggs, garnishes of choice and a drizzle of toasted sesame oil.
