Bio
Chef Brian Dorman is the CEO of Keres Spices is an Austin based chef owned and operated spice trading company. We specialize in organic and Fair Trade products and focus on farmers in third world countries in and around southeast Asia. We are also importing and distributing organic & Fair Trade teas, and gourmet sea salts. We work with salt farmers in Hawaii and are the only sea salt supplier currently testing our products for mercury, arsenic, and other harmful toxins. Our sea salts are low in sodium! That's right, our sea salts have an average of 28% less sodium other suppliers.
I entered into the world of culinary back in 2000 with the start of a little garden on the side of the house. After several years of successfully growing what I call my 'salsa garden', I decided I wanted to learn how to really use all of the vegetables and herbs that I was growing. So I quite my job as a network engineer, moved to London and attended Le Cordon Bleu.
I lived and worked in London for about a year and a half but had to leave after my student visa was about to expire. So I headed to India where I started researching the spice trade. After a few months of living and travelling throughout India, I returned to NYC where I worked as a chef in places like The Modern (MoMA) and Paris Commune (99 Bank St).
Then in the fall of 2006 after another trek across India, I returned back to the States with a suitcase full of the freshest spices ever and started selling them door to door, restaurant to restaurant in NYC. After exactly one year in NYC, I returned to my hometown of Dallas, then finally settled in Austin, TX to grow my little spice importing business.
